Deer delicately seasoned and seared rare,
served with a charred Roma tomato concasse, horseradish aioli
and finished with a drizzle of Rocky Mountain Morel mushroom oil.
SMOKED TRIO
Hot smoked Sockeye salmon mousse, peppered smoked Arctic Char
and smoked Tuna tartare garnished with a goat cheese biscuit,
lemon oil and chive creme fraiche dressed ribbons of cucumber.
